Chicken Lettuce Wraps with Peanut Sauce

Serves 4.


2 lbs leftover roast chicken
½ lb angel hair pasta or rice noodles
1-2 heads Boston lettuce, washed & dried
1 large cucumber, peeled, seeded and julienned
2 large carrots, peeled and julienned (or a bag of pre-cut carrots)
1 red bell pepper, julienned

For Peanut Sauce:

Juice of one lime
3 T soy sauce
3 T peanut butter
4 tsp brown sugar
1 clove garlic, minced
4 T warm water
2 tsp grated ginger 


  • Shred chicken into large pieces
  • Prepare pasta according to package directions
  • In a small bowl, combine all ingredients for the peanut sauce
  • For each wrap, top a lettuce leaf with noodles, chicken, and vegetables
  • Fold lettuce leaf over and serve with peanut sauce on the side
