Thai Summer Basil Salad

Dressing

  • ¼ cup sweet chili sauce
  • 2 T. creamy peanut butter
  • 2 T. rice wine vinegar
  • 1 t. brown sugar
  • ¼ t. fish sauce
  • 1/8 – ¼ t. garlic powder
  • 1/8 t. salt
  • Mix and let rest so flavors can bloom.
I often use Trader Joe’s Spicy Peanut Vinaigrette Dressing from the refrigerated section instead – it’s quick and delicious!

Salad (any quantity of the ingredients below)

  • Spring greens (just a little)
  • Cabbage (main body of salad)
  • Thinly sliced chicken
  • Cucumber
  • Mango
  • Pineapple
  • Carrots, shredded
  • Thai basil
  • Cilantro
  • Finely chopped peanuts
  • Garlic Ginger Won Ton Strips
  • Cooked rice noodles
Toss everything but the peanuts with the dressing.  Top with peanuts and serve!
