Drinking Chocolate

From the kitchen of Alexa Pedersen

Recipe dupe for the hot ganache at Disney World’s
The Ganachery, honed and refined by the good
people of the internet.

A little goes a long way! This European style drinking
chocolate is very rich, nothing like your typical Swiss
Miss hot chocolate. A standard serving size is 3-5oz,
perfect to be served in an espresso cup or
demitasse.

INGREDIENTS

  • Heavy Cream - 20oz
  • 2% milk - 5oz
  • Milk Chocolate - 6oz
  • Dark Chocolate (70% cocoa or less. Semi-sweet chocolate chips also work) - 6oz
  • Caramel - 4oz
  • Vanilla extract - 1/2 tsp
  • Sea Salt - to taste (optional)

DIRECTIONS

  1. Chop milk and dark chocolate and add to a large bowl. Use high quality chocolate.
  2. Combine milk and heavy cream in a sauce pan over medium heat and bring to a simmer. Be careful not to boil it.
  3. Remove milk/cream from heat and immediately pour it over the chocolate. Stir until glossy and smooth.
  4. Return mixture back to saucepan, stirring until completely combined.
  5. Add in your caramel, vanilla, and sea salt and stir until combined. Let simmer for 3-5 minutes, stirring constantly to avoid boiling.

Bonus: Jazz it up with other flavors like cinnamon, nutmeg, instant coffee powder, paprika, chili powder, cayenne pepper, or maple syrup.

Sip slowly, savor, and enjoy!
